Onion
1 medium, diced
Carrots
2 medium, diced
Frozen peas
1 cup
Green onions
2, chopped (for garnish)
Eggs
2, beaten
Soy sauce
3 tablespoons
Salt
1/2 teaspoon
Pepper
1/4 teaspoon
Cooked rice
4 cups, preferably day-old

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat until shimmering.
  2. Add the diced onion and carrots to the skillet. Sauté for about 5 minutes, or until the vegetables are tender and fragrant.
  3. Stir in the frozen peas and cook for an additional 2 minutes until heated through.
  4. Push the vegetable mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked.
  5. Once the eggs are cooked, add the cooked rice to the skillet, breaking up any clumps. Stir well to combine the rice with the vegetables and eggs.
