  • Frozen mixed vegetables (2 cups)
  • Eggs (2, beaten)
  • Garlic (3 cloves, minced)
  • Ginger (1 tablespoon, minced)
  • Soy sauce (3 tablespoons)
  • Sesame oil (2 tablespoons)
  • Green onions (3, sliced)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Heat a large skillet or wok over medium heat, then add the sesame oil, swirling to coat the bottom.

  4. Stir in the frozen mixed vegetables and cook until heated through, about 3-4 minutes.
  5. Push the vegetables to one side of the pan and add the cold, cooked rice to the other side, breaking up any clumps.
  6. Drizzle the soy sauce over the rice, then stir to combine it with the vegetables.
  7. Add the scrambled eggs and sliced green onions back into the pan, mixing everything thoroughly.
  8. Season with salt and pepper to taste, cooking for an additional 2-3 minutes until everything is heated through.
  9. Serve hot and enjoy your delicious fried rice!
