- 2, beaten Eggs
- 1 cup Frozen peas and carrots
- 1 cup, diced Fresh pineapple
- 1 pound, peeled and deveined Shrimp
- 4 cups, chilled Cooked rice

Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp to the skillet and cook until they turn pink and are fully cooked, about 2-3 minutes. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the minced garlic, ginger, and sliced green onions. Sauté for 1 minute until fragrant, being careful not to burn the garlic.
- Push the garlic, ginger, and green onions to one side of the skillet. Pour the beaten eggs into the other side and scramble until fully cooked.
- Add the frozen peas and carrots to the skillet and cook for 2 minutes, stirring occasionally until heated through.
- Stir in the chilled cooked rice, followed by the soy sauce and sesame oil. Mix well to combine all ingredients evenly and ensure the rice is heated through.
- Return the cooked shrimp to the skillet and add the diced pineapple. Stir-fry for another 2-3 minutes until all ingredients are heated through and well combined.
