Ingredients

Original recipe serves 4

Remoulade sauce
1 cup, homemade or store-bought
Pickles
8 slices
Tomato
1, sliced
Lettuce
8 leaves, rinsed and dried
French bread
1 loaf
Vegetable oil
2 cups, for frying
Black pepper
1/2 teaspoon
Salt
1/2 teaspoon
Cajun seasoning
1 tablespoon
Cornmeal
1/2 cup
All-purpose flour
1/2 cup
Shrimp
1 pound, peeled and deveined

Instructions

  1. In a shallow bowl, combine the all-purpose flour, cornmeal, Cajun seasoning, salt, and black pepper to create your dredging mixture.
  2. Toss the shrimp in the mixture, ensuring they are fully coated. Shake off any excess.
  3. Heat the vegetable oil in a large skillet over medium-high heat until it reaches about 350°F (175°C).
  4. Fry the shrimp in the hot oil in batches, ensuring not to overcrowd the pan. They should be golden brown and crispy in about 2-3 minutes per side.
  5. Transfer the fried shrimp to a paper towel-lined plate to absorb any excess oil.
  6. Slice the French bread lengthwise to create a top and bottom half.
  7. Spread a generous layer of remoulade sauce on both sides of the bread.
  8. On the bottom half of the bread, arrange the lettuce, tomato slices, and pickles. Top with the crispy fried shrimp.
  9. Cover with the top half of the bread, pressing gently to secure the sandwich.
