Fried Shrimp Po Boy
Bite into a slice of New Orleans with this authentic Fried Shrimp Po Boy sandwich. Ingredients
- 1 cup, homemade or store-bought Remoulade sauce
- 8 slices Pickles
- 1, sliced Tomato
- 8 leaves, rinsed and dried Lettuce
- 1 loaf French bread
- 2 cups, for frying Vegetable oil
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Salt
- 1 tablespoon Cajun seasoning
- 1/2 cup Cornmeal
- 1/2 cup All-purpose flour
- 1 pound, peeled and deveined Shrimp

Instructions
- In a shallow bowl, combine the all-purpose flour, cornmeal, Cajun seasoning, salt, and black pepper to create your dredging mixture.
- Toss the shrimp in the mixture, ensuring they are fully coated. Shake off any excess.
- Heat the vegetable oil in a large skillet over medium-high heat until it reaches about 350°F (175°C).
- Fry the shrimp in the hot oil in batches, ensuring not to overcrowd the pan. They should be golden brown and crispy in about 2-3 minutes per side.
- Transfer the fried shrimp to a paper towel-lined plate to absorb any excess oil.
- Slice the French bread lengthwise to create a top and bottom half.
- Spread a generous layer of remoulade sauce on both sides of the bread.
- On the bottom half of the bread, arrange the lettuce, tomato slices, and pickles. Top with the crispy fried shrimp.
- Cover with the top half of the bread, pressing gently to secure the sandwich.
