Ingredients

Yucca root
1 large (about 2 pounds), peeled and cut into thick fries
Vegetable oil
for frying (enough to fill the pot about 2 inches deep)
Salt
1 teaspoon
Garlic powder
1 teaspoon
Paprika
1 teaspoon
Mayonnaise
1/2 cup
Fresh lime juice
2 tablespoons
Chili powder
1/2 teaspoon
Cilantro, chopped
1 tablespoon (optional, for garnish)

Instructions

  1. Peel the yucca root and cut it into thick fries, about 1/2 inch wide.
  2. In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
  3. Carefully add the yucca fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 8-10 minutes, turning them occasionally for even cooking.
  4. Once cooked, remove the fries from the oil and drain on a paper towel-lined plate to remove excess oil.
  5. In a small bowl, mix together the salt, garlic powder, and paprika. Sprinkle the seasoning mixture over the fried yucca fries and toss to coat evenly.
  6. For the dipping sauce, in another bowl, combine mayonnaise, fresh lime juice, and chili powder. Mix well until smooth. Adjust seasoning to taste.
