Crispy Fried Yucca with Tangy Dipping Sauce

Ingredients
- Yucca root
- 1 large (about 2 pounds), peeled and cut into thick fries
- Vegetable oil
- for frying (enough to fill the pot about 2 inches deep)
- Salt
- 1 teaspoon
- Garlic powder
- 1 teaspoon
- Paprika
- 1 teaspoon
- Mayonnaise
- 1/2 cup
- Fresh lime juice
- 2 tablespoons
- Chili powder
- 1/2 teaspoon
- Cilantro, chopped
- 1 tablespoon (optional, for garnish)
Instructions
- Peel the yucca root and cut it into thick fries, about 1/2 inch wide.
- In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Carefully add the yucca fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 8-10 minutes, turning them occasionally for even cooking.
- Once cooked, remove the fries from the oil and drain on a paper towel-lined plate to remove excess oil.
- In a small bowl, mix together the salt, garlic powder, and paprika. Sprinkle the seasoning mixture over the fried yucca fries and toss to coat evenly.
- For the dipping sauce, in another bowl, combine mayonnaise, fresh lime juice, and chili powder. Mix well until smooth. Adjust seasoning to taste.
- Serve the crispy fried yucca with the tangy dipping sauce on the side, garnished with chopped cilantro if desired.
