Instructions
- Begin by preparing the meats: cut the pork belly, beef ribs, and chicken into pieces.
- Season all the meat pieces generously with salt and black pepper, ensuring they are well coated.
- In a large pot or deep frying pan, heat enough vegetable oil over medium heat to submerge the meat.
- Once the oil is hot, carefully add the seasoned meat and fry until they are golden brown and crispy, about 8-10 minutes per side.
- While the meat is frying, peel the potatoes and plantains and cut them into thick slices.
- In a separate pan, fry the potato slices in the hot oil until they are golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
- Next, fry the plantain slices until golden and crispy, about 3-5 minutes. Remove and drain on paper towels.
- In a pot, bring water to a boil and add the corn. Boil until tender, about 10-12 minutes. Drain and set aside.
- To serve, arrange the fried meats, potatoes, plantains, and corn on a large platter, and provide a side of Aji for dipping.
Tips
- For a spicier kick, add chopped jalapeños or a splash of hot sauce to the meat seasoning.
- You can substitute the meats with your preferred choices such as fish or turkey for a lighter version.
- Serve with a fresh salad or avocado slices to balance the richness of the fried components.
