Instructions

  1. In a bowl, combine the mixed dried fruits and rum. Let it soak for at least 1 hour or overnight for deeper flavor.
  2. Preheat the oven to 325°F (165°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easier removal.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  4. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-5 minutes.
  5. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract until combined.
  6. Gradually add the flour mixture to the butter mixture, mixing until just combined. Be careful not to overmix.
