Fufu
Fufu is a beloved staple in West African cuisine, known for its delightful texture and versatility. This starchy dish is made by expertly pounding cooked cassava and plantains into a smooth, elastic dough that serves as the perfect accompaniment to rich soups and hearty stews. Traditionally enjoyed by hand, fufu is not just food; it embodies the communal spirit of West African dining, where sharing is central to the experience. With its subtle flavor, fufu can soak up the delicious sauces of savory dishes, making every bite a comforting and satisfying delight.

Instructions
- Peel the cassava and cut it into small pieces.
- Peel the plantains and cut them into chunks.
- In a large pot, place the cassava and plantains and cover them with water.
- Add salt to the pot and bring to a boil over medium-high heat.
- Once boiling, reduce the heat to medium and cook for about 30 minutes, or until the cassava and plantains are tender and easily pierced with a fork.
- Remove from heat and drain the water using a colander.
- Transfer the cooked cassava and plantains to a large mortar and pound with a pestle until smooth and well combined. Alternatively, use a food processor to blend them until a smooth, elastic dough forms.
- Once the fufu reaches a smooth consistency, divide it into portions and shape them into balls or mounds.
- Serve the fufu with your choice of rich soup or stew, such as peanut soup or egusi soup, for a truly authentic experience.
