Ingredients

Cassava
2 cups, peeled and cut into small pieces
Plantains
2, peeled and cut into chunks
Salt
1 teaspoon
Water
enough to cover the cassava and plantains

Instructions

  1. Peel the cassava and cut it into small pieces.
  2. Peel the plantains and cut them into chunks.
  3. In a large pot, place the cassava and plantains and cover them with water.
  4. Add salt to the pot and bring to a boil over medium-high heat.
  5. Once boiling, reduce the heat to medium and cook for about 30 minutes, or until the cassava and plantains are tender and easily pierced with a fork.
  6. Remove from heat and drain the water using a colander.
  7. Transfer the cooked cassava and plantains to a large mortar and pound with a pestle until smooth and well combined. Alternatively, use a food processor to blend them until a smooth, elastic dough forms.
  8. Once the fufu reaches a smooth consistency, divide it into portions and shape them into balls or mounds.
  9. Serve the fufu with your choice of rich soup or stew, such as peanut soup or egusi soup, for a truly authentic experience.
