Fugazza

Fugazza is a beloved Argentinean specialty reminiscent of pizza, yet uniquely its own. This delightful dish features a crispy crust generously topped with sweet, caramelized onions and a blend of gooey mozzarella and savory Parmesan cheese. Often enjoyed as a savory snack or a hearty meal, Fugazza is a celebration of simple, fresh ingredients that come together to create an explosion of flavor. It has roots in Italian cuisine, brought to Argentina by immigrants, making it a cultural fusion that embodies the heart of Argentine culinary traditions.

Ingredients

Pizza dough
1 batch (store-bought or homemade)
Olive oil
2 tablespoons
Onions
2 large, thinly sliced
Salt
to taste
Black pepper
to taste
Mozzarella cheese
1 1/2 cups, shredded
Parmesan cheese
1/2 cup, grated
Fresh parsley
1/4 cup, chopped (for garnish)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Roll out the pizza dough into a rectangular shape and transfer it to a lightly greased baking sheet or pizza stone.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onions, and season with salt and black pepper.
  4. Sauté the onions, stirring occasionally, until they become soft and golden brown, about 10-15 minutes. This step is crucial for developing the sweet flavor of the onions.
  5. Evenly spread the caramelized onions over the prepared pizza dough, making sure to cover the surface.
  6. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese generously over the onions.
  7. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Sprinkle with fresh parsley before slicing.
  9. Slice into squares or triangles and serve hot as a delicious appetizer or main dish.

Tips

  • 💡 For an added kick, consider adding red pepper flakes to the onions while they caramelize.
  • 💡 You can also experiment with different cheeses, such as provolone or fontina, for varied flavors.
  • 💡 Serve Fugazza with a side of chimichurri sauce for a fresh and zesty accompaniment.
