Fujian-Style Seafood Fried Rice

Ingredients

- 2, beaten Eggs
- 1/2 cup, fresh or frozen Green peas
- 1, finely diced Carrot
- 1, finely diced Onion
- 2 cloves, minced Garlic
- 2 tablespoons Vegetable oil
- 1, diced Chicken breast
- 1/2 cup, diced Scallops
- 1/2 cup, peeled and deveined Shrimp
- 2 cups Cooked rice

Instructions
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the shrimp, scallops, and chicken. Stir-fry until cooked through. Once done, transfer to a plate and set aside.
- In the same wok, add the remaining oil. Stir in the minced garlic and diced onion, and fry until they release their aroma.
- Introduce the diced carrot and green peas into the wok. Continue to stir-fry for another 2 minutes until they are slightly tender.
- Push the sautéed vegetables to one side of the wok. Pour the beaten eggs into the other side. Once the eggs start to set, scramble them and combine with the vegetables.
- Add the cooked rice into the wok. Stir-fry for an additional 2 minutes until the rice is heated through.
- Bring back the cooked seafood and chicken into the wok. Mix all the components well.
- In a small bowl, whisk together the soy sauce, chicken broth, and cornstarch until smooth. This forms a flavorful sauce that will coat the fried rice.
- Pour the sauce over the fried rice in the wok. Stir thoroughly until the fried rice is well-coated and the sauce has thickened, about 2 minutes.
