Graham cracker crumbs
1 1/2 cups
Unsalted butter
1/2 cup, melted
Cream cheese
24 ounces, softened
Granulated sugar
1 cup
Eggs
3 large
Vanilla extract
1 teaspoon
All-purpose flour
2 tablespoons
Sprinkles
1/2 cup plus extra for topping
Whipped cream
for serving

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
  3. Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust.
  4. In a separate mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract using an electric mixer until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Carefully fold in the flour until just combined.
  6. Gently fold in the sprinkles, ensuring not to overmix to keep the colors vibrant.
  7. Pour the cheesecake batter over the prepared crust in the springform pan, smoothing the top with a spatula.
  8. Bake for 50-60 minutes, or until the center is set and the edges are lightly golden. The center should still have a slight jiggle.
  9. Remove from the oven and let cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight for the best flavor and texture.
