- Lemongrass (2 stalks, finely minced)

- Fish sauce (3 tablespoons)
- Soy sauce (2 tablespoons)
- Honey (2 tablespoons)
- Lime juice (2 tablespoons)
- Ground black pepper (1 teaspoon)
- Vegetable oil (2 tablespoons (for grilling))
- Fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- In a medium bowl, combine the minced lemongrass, garlic, fish sauce, soy sauce, honey, lime juice, and ground black pepper to create a flavorful marinade.
- Place the chicken thighs in a large ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken, ensuring all pieces are well coated. For best results, let it marinate in the refrigerator for at least 2 hours, or overnight.
- Preheat the grill to medium-high heat (about 375°F to 400°F).
- Remove the chicken from the marinade and gently brush off any excess marinade. Reserve the marinade for basting during grilling.
- To prevent sticking, brush the grill grates with vegetable oil. Place the chicken thighs on the grill, skin side down, and cook for about 5-6 minutes.
