Galbi Short Ribs
Galbi short ribs, also known as Korean BBQ short ribs, are a mouthwatering delight that brings the flavors of Korea right to your table. Marinated in a rich, savory mixture of soy sauce, sesame oil, garlic, and ginger, these tender beef short ribs are grilled to perfection, creating a caramelized exterior that gives way to juicy, flavorful meat. Traditionally enjoyed during celebrations and family gatherings, Galbi is not just a dish but a cultural experience that showcases the art of Korean grilling.
Servings: 4
Ingredients
- Beef short ribs (2 pounds, cut into 1/4 inch thick slices)
- Soy sauce (1/2 cup)
- Brown sugar (1/4 cup)
- Sesame oil (2 tablespoons)
- Garlic (4 cloves, minced)
- Ginger (1 tablespoon, grated)
- Green onions (3, chopped (plus extra for garnish))
- Sesame seeds (2 tablespoons, toasted)
- Salt (to taste)
- Pepper (to taste)
- Vegetable oil (for grilling)
Instructions
- In a large bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onions, sesame seeds, salt, and pepper to create a flavorful marinade.
- Place the beef short ribs in a large ziplock bag or a shallow dish and pour the marinade over them. Ensure the ribs are well-coated, then seal the bag or cover the dish. Marinate in the refrigerator for at least 2 hours, or preferably overnight for maximum flavor.
- Preheat your grill to medium-high heat. Brush the grill grates with vegetable oil to prevent sticking.
- Remove the short ribs from the marinade, discarding any excess marinade.
- Grill the short ribs for about 5-7 minutes on each side, or until they achieve your desired level of doneness and a nice char. Keep an eye on them to avoid burning.
- Once grilled, remove the ribs and let them rest for a few minutes to allow the juices to redistribute.
- Serve the Galbi short ribs hot, garnished with additional chopped green onions and toasted sesame seeds. Pair them with steamed rice and your favorite Korean side dishes, such as kimchi or pickled vegetables.
