Ingredients

Puff pastry
2 sheets, thawed
Almond flour
1 cup
Granulated sugar
2/3 cup
Unsalted butter
1/2 cup, softened
Eggs
3, divided
Almond extract
1 teaspoon
Vanilla extract
1 teaspoon
Powdered sugar
for dusting
Figurine or bean
1 (optional, for tradition)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, blend the almond flour, granulated sugar, softened butter, 2 eggs, vanilla extract, and almond extract until smooth and creamy to create the almond filling.
  3. On a lightly floured surface, roll out one sheet of puff pastry to smooth out any creases. Transfer it to a baking sheet lined with parchment paper.
  4. Spread the almond filling evenly over the puff pastry, leaving a 1-inch border around the edges.
  5. Carefully place the second sheet of puff pastry on top of the filling. Firmly press the edges together to seal. Use a fork to crimp the edges for a decorative touch.
  6. With a sharp knife, make decorative cuts in the top layer of pastry, taking care not to cut through to the filling.
  7. Beat the remaining egg and brush it over the top of the galette for a beautiful golden finish.
  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.
  9. Once baked, allow the galette to cool slightly before dusting generously with powdered sugar. Remember to hide the figurine or bean inside before slicing and serving!
