- Puff pastry
- 2 sheets, thawed
- Almond flour
- 1 cup
- Granulated sugar
- 2/3 cup
- Unsalted butter
- 1/2 cup, softened
- Eggs
- 3, divided
- Almond extract
- 1 teaspoon
- Vanilla extract
- 1 teaspoon
- Powdered sugar
- for dusting
- Figurine or bean
- 1 (optional, for tradition)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, blend the almond flour, granulated sugar, softened butter, 2 eggs, vanilla extract, and almond extract until smooth and creamy to create the almond filling.
- On a lightly floured surface, roll out one sheet of puff pastry to smooth out any creases. Transfer it to a baking sheet lined with parchment paper.
- Spread the almond filling evenly over the puff pastry, leaving a 1-inch border around the edges.
- Carefully place the second sheet of puff pastry on top of the filling. Firmly press the edges together to seal. Use a fork to crimp the edges for a decorative touch.
- With a sharp knife, make decorative cuts in the top layer of pastry, taking care not to cut through to the filling.
- Beat the remaining egg and brush it over the top of the galette for a beautiful golden finish.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.
- Once baked, allow the galette to cool slightly before dusting generously with powdered sugar. Remember to hide the figurine or bean inside before slicing and serving!
