Instructions
- Begin by cleaning the crabs thoroughly. Remove the gills and the apron (the flap on the underside of the crab). Rinse under cold water to ensure they are clean.
- In a large bowl, combine the soy sauce, water, sugar, minced garlic, grated ginger, chopped green onions, and sliced red chili pepper. Stir well until the sugar dissolves.
- Carefully place the cleaned crabs into the marinade, ensuring they are fully submerged. You may need to press them down gently.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 24 hours. This marinating process allows the crabs to absorb the rich flavors of the sauce.
- Before serving, remove the crabs from the marinade. Drizzle sesame oil over the crabs and sprinkle with toasted sesame seeds to enhance the flavor and presentation.
- Gently mix the crabs to ensure the sesame oil and sesame seeds are evenly distributed.
- Serve the Ganjang Gejang chilled as a refreshing appetizer, accompanied by a side of steamed rice and pickled vegetables for a complete experience.
Tips
- For a spicier version, add more red chili peppers or a splash of Korean chili paste (gochujang) to the marinade.
- If you prefer a sweeter taste, increase the amount of sugar in the marinade to suit your palate.
- This dish pairs beautifully with a cold glass of Korean beer or traditional soju.
