Servings: 4

Ingredients

Chicken breasts
4, boneless and skinless
Zucchini
2, sliced into half-moons
Garlic cloves
4, minced
Olive oil
1/4 cup, divided
Lemon juice
2 tablespoons, freshly squeezed
Dried oregano
1 teaspoon
Salt
1 teaspoon, or to taste
Black pepper
1/2 teaspoon, or to taste
Fresh herbs (optional)
chopped parsley or basil, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the minced garlic, 2 tablespoons of olive oil, lemon juice, dried oregano, salt, and black pepper until well combined to create the marinade.
  3. Place the chicken breasts in a greased baking dish and pour the garlic marinade over the top, ensuring that the chicken is evenly coated.
  4. Arrange the sliced zucchini around the chicken breasts in the baking dish. Drizzle the remaining olive oil over the zucchini and season with additional salt and pepper to taste.
  5. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F / 75°C) and the zucchini is tender.
  6. Once cooked, let the dish rest for a few minutes before serving to allow the juices to redistribute for maximum flavor.
  7. Serve hot, garnished with fresh herbs if desired, alongside your favorite sides.
