
Garlic and Zucchini Bread Pudding

Ingredients
- Fresh parsley (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Cheddar cheese (1 cup, shredded)
- Parmesan cheese (1 cup, grated)
- Milk (2 cups)
- Eggs (4)
- Garlic (4 cloves, minced)
- Zucchini (2 medium, grated)
- French bread (8 cups, cubed)
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the cubed bread, grated zucchini, minced garlic, Parmesan cheese, and cheddar cheese.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the bread mixture and stir until well combined.
- Let the mixture sit for 10 minutes to allow the bread to absorb the liquid.
- Transfer the mixture to a greased baking dish and spread it out evenly.
- Bake for 40-45 minutes, or until the top is golden brown and the pudding is set.
- Remove from the oven and let it cool for a few minutes.
- Garnish with fresh parsley before serving.
