Ingredients

Zucchini
2 medium, grated
Garlic cloves
6, unpeeled
Greek yogurt
1 cup
Olive oil
2 tablespoons
Lemon juice
1 tablespoon
Fresh dill
2 tablespoons, chopped
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap the garlic cloves tightly in aluminum foil and place them in the oven. Roast for about 20 minutes until the cloves are soft and golden.
  3. While the garlic is roasting, grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture to avoid a watery dip.
