Ingredients
- Zucchini
- 2 medium, grated
- Garlic cloves
- 6, unpeeled
- Greek yogurt
- 1 cup
- Olive oil
- 2 tablespoons
- Lemon juice
- 1 tablespoon
- Fresh dill
- 2 tablespoons, chopped
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
Instructions
- Preheat your oven to 400°F (200°C).
- Wrap the garlic cloves tightly in aluminum foil and place them in the oven. Roast for about 20 minutes until the cloves are soft and golden.
- While the garlic is roasting, grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture to avoid a watery dip.
- In a large mixing bowl, combine the grated zucchini, the roasted garlic (squeezed out from the skins), Greek yogurt, olive oil, lemon juice, chopped dill, salt, and black pepper.
- Using a fork or spatula, mix well until all ingredients are fully incorporated, resulting in a creamy dip.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
- Serve your Creamy Garlic and Zucchini Dip with an assortment of fresh vegetables, crunchy crackers, or warm pita bread.
Tips
- For added texture, consider folding in some finely chopped nuts like walnuts or pine nuts.
- If you prefer a spicier dip, add a pinch of red pepper flakes or a dash of hot sauce.
- This dip can also be used as a spread on sandwiches or wraps.
