Ingredients

  • Salt and pepper (to taste)
  • Olive oil (2 tablespoons)
  • Fresh parsley (2 tablespoons, chopped)
  • Breadcrumbs (1/2 cup)
  • Parmesan cheese (1/2 cup, grated)
  • Garlic (4 cloves, minced)
  • Zucchini (4 medium, sliced)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and cook for 1-2 minutes, until fragrant.
  4. Add the sliced zucchini to the skillet and cook for 5-7 minutes, until slightly softened.
  5. In a small bowl, combine the grated Parmesan cheese, breadcrumbs, and chopped parsley.
