Ingredients

Zucchini
1 medium, sliced
Garlic
2 cloves, minced
Cheddar cheese
4 slices (or more to taste)
Bread
4 slices (your choice of bread)
Butter
4 tablespoons, softened
Salt
to taste
Black pepper
to taste

Instructions

  1. In a skillet, heat 2 tablespoons of butter over medium heat until melted.
  2. Add the sliced zucchini and minced garlic to the skillet. Sauté until the zucchini is tender and slightly browned, about 5 minutes. Season with salt and pepper to taste. Remove from the skillet and set aside.
  3. Spread the softened butter generously on one side of each slice of bread.
  4. In the same skillet, place 2 slices of bread, buttered side down. Top each slice with a slice of cheddar cheese.
  5. Evenly distribute the sautéed zucchini and garlic over the cheese, and then place another slice of cheddar on top.
  6. Cover with the remaining bread slices, buttered side up.
  7. Cook the sandwiches over medium heat for about 2-3 minutes per side, or until the bread is a beautiful golden brown and the cheese has melted. You may need to press down slightly to ensure even cooking.
