Garlic and Zucchini Grilled Cheese

This delicious grilled cheese sandwich is made with garlic, zucchini, and melted cheese.

Ingredients

  • Salt and pepper (to taste)
  • Cheddar cheese (4 slices)
  • Bread (4 slices)
  • Butter (4 tablespoons)
  • Garlic (2 cloves, minced)
  • Zucchini (1 medium, thinly sliced)

Instructions

  1. Heat 2 tablespoons of butter in a skillet over medium heat.
  2. Add the sliced zucchini and minced garlic to the skillet. Cook until the zucchini is tender and slightly browned, about 5 minutes. Season with salt and pepper.
  3. Remove the zucchini and garlic from the skillet and set aside.
  4. Spread butter on one side of each bread slice.
  5. Place 2 slices of bread, buttered side down, in the skillet.
  6. Top each slice with a slice of cheddar cheese, followed by the cooked zucchini and garlic.
  7. Place the remaining bread slices on top, buttered side up.
  8. Cook the sandwiches over medium heat until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
  9. Remove from the skillet and let cool for a few minutes before serving.
  10. Slice the sandwiches in half and enjoy!
