Servings: 4

Ingredients

Cod fillets
4 (6-ounce) fillets
Unsalted butter
1/4 cup (1/2 stick)
Garlic
4 cloves, minced
Fresh parsley
2 tablespoons, chopped
Lemon juice
2 tablespoons, freshly squeezed
Salt
1 teaspoon, to taste
Black pepper
1/2 teaspoon, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
  3. In a small saucepan, melt the unsalted butter over medium heat. Once melted, add the minced garlic and sauté for 1-2 minutes, stirring frequently until fragrant. Be careful not to burn the garlic.
  4. Remove the saucepan from the heat and stir in the freshly squeezed lemon juice and chopped parsley, mixing well to combine the flavors.
  5. In a greased baking dish, arrange the seasoned cod fillets. Pour the garlic butter mixture evenly over the cod, ensuring that each fillet is well-coated.
  6. Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork. The internal temperature should reach at least 145°F (63°C).
  7. Remove from the oven and let rest for a few minutes before serving. Garnish with additional parsley and lemon wedges if desired.
