Servings: 4
Ingredients
- Cod fillets
- 4 (6-ounce) fillets
- Unsalted butter
- 1/4 cup (1/2 stick)
- Garlic
- 4 cloves, minced
- Fresh parsley
- 2 tablespoons, chopped
- Lemon juice
- 2 tablespoons, freshly squeezed
- Salt
- 1 teaspoon, to taste
- Black pepper
- 1/2 teaspoon, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
- In a small saucepan, melt the unsalted butter over medium heat. Once melted, add the minced garlic and sauté for 1-2 minutes, stirring frequently until fragrant. Be careful not to burn the garlic.
- Remove the saucepan from the heat and stir in the freshly squeezed lemon juice and chopped parsley, mixing well to combine the flavors.
- In a greased baking dish, arrange the seasoned cod fillets. Pour the garlic butter mixture evenly over the cod, ensuring that each fillet is well-coated.
- Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork. The internal temperature should reach at least 145°F (63°C).
- Remove from the oven and let rest for a few minutes before serving. Garnish with additional parsley and lemon wedges if desired.
