Potatoes
4, large, peeled and cubed
Olive oil
2 tablespoons
Garlic
4 cloves, minced
Parmesan cheese
1 cup, freshly grated
Parsley
1/4 cup, fresh, chopped
Salt
1 teaspoon, or to taste
Black pepper
1/2 teaspoon, freshly ground

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the peeled and cubed potatoes in a large bowl.
  3. Add the olive oil, minced garlic, freshly grated Parmesan, chopped parsley, salt, and freshly ground black pepper. Toss all the ingredients until the potatoes are thoroughly coated.
  4. Spread the potatoes out in a single layer on a baking sheet, ensuring none of them are overlapping for even cooking.

  6. Serve the Garlic Parmesan Country Potatoes immediately while they're hot, and garnish with extra Parmesan and parsley if desired.

Tips

  • 💡 You can leave the potato skins on for some added texture.
  • 💡 Feel free to mix in other herbs like thyme or rosemary for a different flavor profile.
  • 💡 These potatoes are great as a side dish for roasts or as a breakfast item with scrambled eggs.
