Ingredients

  • Parsley (1 tablespoon, chopped)
  • Salt and pepper (to taste)
  • Parmesan cheese (1/2 cup, grated)
  • Garlic (3 cloves, minced)
  • Olive oil (2 tablespoons)
  • Potatoes (1.5 pounds, cut into 1-inch pieces)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with non-stick spray.
  2. Place the potatoes in a single layer onto the prepared baking sheet. Add olive oil, garlic, and Parmesan; season with salt and pepper, to taste.
  3. Gently toss to combine until the potatoes are evenly coated.
  4. Place into oven and bake for 25-30 minutes, or until golden brown and crisp. Stir in parsley.
  5. Serve immediately, sprinkled with additional Parmesan and parsley, if desired.
