Ingredients
- Fresh parsley (1 tablespoon, chopped)
- Olive oil (2 tablespoons)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Breadcrumbs (1/2 cup)
- Parmesan cheese (1/2 cup, grated)
- Garlic powder (1 teaspoon)
- Zucchini (2 medium-sized)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the zucchini into thin rounds, about 1/4 inch thick.
- In a shallow bowl, combine the garlic powder, grated parmesan cheese, breadcrumbs, salt, and black pepper.
- Dip each zucchini slice into the olive oil, then coat it with the breadcrumb mixture, pressing gently to adhere.
