- 6 large, roughly chopped Ripe tomatoes
- 1 medium, peeled and chopped Cucumber
- 1, seeds removed and chopped Red bell pepper
- 1 small, chopped Red onion
- 2, minced Garlic cloves
- 2 slices of day-old bread, crusts removed Bread
- 1/4 cup Extra virgin olive oil
- 2 tablespoons Red wine vinegar
- 1 teaspoon (to taste) Salt
- 1/2 teaspoon (to taste) Black pepper
- 1/4 teaspoon (optional, for heat) Cayenne pepper
- 2 tablespoons, chopped (for garnish) Cilantro or parsley

Instructions
