Ingredients

  • Cayenne pepper (1/4 teaspoon)
  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Extra virgin olive oil (2 tablespoons)
  • Fresh cilantro (2 tablespoons, chopped)
  • Fresh lime juice (2 tablespoons)
  • Tomato (1, diced)
  • Red onion (1/4 cup, finely chopped)
  • Red bell pepper (1, seeded and diced)
  • Cucumber (1, peeled and diced)
  • Watermelon (6 cups, diced)

Instructions

  1. In a blender, combine the watermelon, cucumber, red bell pepper, red onion, tomato, lime juice, cilantro, olive oil, salt, black pepper, and cayenne pepper.
  2. Blend until smooth and well combined.
  3. Taste and adjust the seasoning if needed.
  4. Chill in the refrigerator for at least 1 hour before serving.
