
Genovese Pesto
This traditional Genovese pesto is made with fresh basil, pine nuts, garlic, Parmesan cheese, and olive oil.
Ingredients
- Black pepper (to taste)
- Salt (to taste)
- Extra virgin olive oil (1/2 cup)
- Parmesan cheese (1/2 cup, grated)
- Garlic cloves (2)
- Pine nuts (1/4 cup)
- Fresh basil leaves (2 cups)
Instructions
- In a food processor or blender, combine the basil leaves, pine nuts, garlic, and Parmesan cheese.
- Pulse until the ingredients are finely chopped.
- While the processor is running, slowly drizzle in the olive oil until the pesto reaches a smooth consistency.
- Season with salt and black pepper to taste.
- Transfer the pesto to a jar or container and store in the refrigerator until ready to use.
- Serve the Genovese pesto with pasta, as a spread on bread, or as a sauce for grilled meats or vegetables.
