- Potatoes
- 2 pounds, waxy variety, boiled and sliced
- Bacon
- 6 slices, cooked until crispy and crumbled
- Onion

- Apple cider vinegar
- 1/3 cup
- Dijon mustard
- 2 tablespoons
- Sugar
- 1 tablespoon
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon, freshly ground
- Fresh parsley
- 1/4 cup, chopped (for garnish)
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly before slicing them into rounds.
- In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet and crumble it once cooled.
- In a large bowl, combine the boiled potato slices, crumbled bacon, and finely chopped onion.
- In a separate small bowl, whisk together the apple cider vinegar, Dijon mustard, sugar, salt, and freshly ground black pepper until smooth.
