Ghanaian Curry

This Ghanaian Curry is made with a flavorful blend of spices, tomatoes, and chicken.

Ingredients

  • Cilantro (1/4 cup, chopped)
  • Salt and pepper (to taste)
  • Chicken (1 pound, cut into 1-inch cubes)
  • Chicken broth (1 cup)
  • Tomatoes (2 cups, diced)
  • Cayenne pepper (1/4 teaspoon)
  • Cumin (1 teaspoon)
  • Curry powder (2 tablespoons)
  • Ginger (1 tablespoon, minced)
  • Garlic (2 cloves, minced)
  • Onion (1 large, chopped)
  • Olive oil (2 tablespoons)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
  3. Add the curry powder, cumin, and cayenne pepper and cook for 1 minute.
  4. Add the tomatoes, chicken broth, and chicken and bring to a boil.
  5. Reduce the heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with cilantro and serve.
