Ingredients

Fresh cilantro
1/4 cup, chopped
Salt and black pepper

Boneless chicken thighs
1 kg, cut into chunks
Chicken broth
2 cups
Fresh tomatoes
4, diced
Cayenne pepper
1 teaspoon
Cumin
2 teaspoons
Curry powder
3 tablespoons
Fresh ginger
1 tablespoon, minced
Garlic cloves
3, minced
Large onion
1, finely chopped
Olive oil
2 tablespoons

Instructions

  1. Marinate the chicken chunks with salt, black pepper, and 1 tablespoon of curry powder. Let it sit for at least 30 minutes.
  2. Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and minced ginger. Sauté until the onion becomes translucent and the mixture is fragrant, about 5 minutes.
  3. Stir in the remaining curry powder, cumin, and cayenne pepper. Cook for another minute until the spices are well-blended.
  4. Add the diced tomatoes and chicken broth to the pot. Stir well and bring the mixture to a boil.
  5. Once boiling, add the marinated chicken chunks. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the chicken is thoroughly cooked.
  6. Taste the curry and adjust the seasoning with salt and black pepper if needed.
  7. Before serving, garnish the curry with the chopped fresh cilantro. Serve hot with rice or naan bread.
