Instructions
- Marinate the chicken chunks with salt, black pepper, and 1 tablespoon of curry powder. Let it sit for at least 30 minutes.
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and minced ginger. Sauté until the onion becomes translucent and the mixture is fragrant, about 5 minutes.
- Stir in the remaining curry powder, cumin, and cayenne pepper. Cook for another minute until the spices are well-blended.
- Add the diced tomatoes and chicken broth to the pot. Stir well and bring the mixture to a boil.
- Once boiling, add the marinated chicken chunks. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the chicken is thoroughly cooked.
- Taste the curry and adjust the seasoning with salt and black pepper if needed.
