Ingredients
- Fresh cilantro
- 1/4 cup, chopped
- Salt and black pepper
- to taste
- Boneless chicken thighs
- 1 kg, cut into chunks
- Chicken broth
- 2 cups
- Fresh tomatoes
- 4, diced
- Cayenne pepper
- 1 teaspoon
- Cumin
- 2 teaspoons
- Curry powder
- 3 tablespoons
- Fresh ginger
- 1 tablespoon, minced
- Garlic cloves
- 3, minced
- Large onion
- 1, finely chopped
- Olive oil
- 2 tablespoons
Instructions
- Marinate the chicken chunks with salt, black pepper, and 1 tablespoon of curry powder. Let it sit for at least 30 minutes.
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and minced ginger. Sauté until the onion becomes translucent and the mixture is fragrant, about 5 minutes.
- Stir in the remaining curry powder, cumin, and cayenne pepper. Cook for another minute until the spices are well-blended.
- Add the diced tomatoes and chicken broth to the pot. Stir well and bring the mixture to a boil.
- Once boiling, add the marinated chicken chunks. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the chicken is thoroughly cooked.
- Taste the curry and adjust the seasoning with salt and black pepper if needed.
- Before serving, garnish the curry with the chopped fresh cilantro. Serve hot with rice or naan bread.
Tips
- For a vegetarian variant, swap the chicken with chickpeas or firm tofu.
- You can also add vegetables like bell peppers, peas, or potatoes for extra nutrition and texture.
- The longer you let the chicken marinate, the more flavorful it will be.
