
Ghanaian Peanut Butter Chicken Curry
This flavorful Ghanaian peanut butter chicken curry is a delicious combination of tender chicken, aromatic spices, and creamy peanut butter.
Ingredients
- Fresh cilantro (for garnish)
- Salt and pepper (to taste)
- Tomato paste (2 tablespoons)
- Chicken broth (1 cup)
- Coconut milk (1 can (13.5 oz))
- Peanut butter (1/2 cup)
- Cayenne pepper (1/2 teaspoon)
- Paprika (1 teaspoon)
- Curry powder (2 tablespoons)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Onion (1 medium, finely chopped)
- Chicken thighs (1.5 lbs, boneless and skinless)
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic and grated ginger to the pot and cook for another minute.
- Add the chicken thighs to the pot and cook until browned on all sides.
- In a small bowl, mix together the curry powder, paprika, cayenne pepper, salt, and pepper. Sprinkle the spice mixture over the chicken and stir well to coat.
- Add the peanut butter, coconut milk, chicken broth, and tomato paste to the pot. Stir until well combined.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
- Taste and adjust the seasoning if needed.
- Serve the Ghanaian peanut butter chicken curry over steamed rice or with naan bread.
- Garnish with fresh cilantro before serving.
