Ginataang Bilo Bilo
Sink your teeth into this delightful Filipino dessert, Ginataang Bilo Bilo. It's a warm, comforting concoction of chewy glutinous rice balls, succulent sweet potatoes, ripe bananas, and glistening tapioca pearls, all swimming in a creamy and luscious coconut milk sauce. Ingredients
- 1/2 teaspoon Salt
- 3 leaves Pandan leaves
- 1 cup Brown sugar
- 3 cups Coconut milk
- 1/2 cup Tapioca pearls
- 2, ripe and sliced Bananas
- 2 large, peeled and cubed Sweet potatoes
- 4 cups Water
- 1 cup Glutinous rice flour

Instructions
- In a bowl, combine 1 cup of glutinous rice flour with 3/4 cup of water. Mix until a dough forms.
- Roll the dough into small balls, roughly 1/2 inch in diameter.
- In a pot, bring 4 cups of water to a boil. Add the glutinous rice balls and cook until they float to the surface. Once they float, remove them from the pot and set aside.
- In a separate pot, bring 3 cups of coconut milk to a simmer over medium heat. Add 3 pandan leaves and let it infuse for 5 minutes.
- Add the cubed sweet potatoes into the pot and cook until they are tender, this should take around 10 minutes.
- Add the sliced bananas, 1/2 cup of tapioca pearls, 1 cup of brown sugar, and 1/2 teaspoon of salt into the pot. Stir well to combine all the ingredients.
- Add the cooked glutinous rice balls to the pot and simmer for another 5 minutes.
- Before serving, make sure to remove the pandan leaves.
- You can serve this dessert hot or chilled, depending on your preference. Enjoy!

- For an extra layer of flavor, try adding a cup of jackfruit strips.
- You can also adjust the amount of sugar based on your preferred level of sweetness.
