1 cup, rinsed
Coconut milk
2 cups
Sugar
1/2 cup, or to taste
Vanilla extract
1 teaspoon
Salt
1/4 teaspoon
Water
4 cups
Saba bananas
2, sliced
Glutinous rice balls (bilo)
1 cup, prepared

Instructions

  1. Rinse the mung beans under cold water and place them in a large pot with 4 cups of water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 30 minutes, or until the beans are soft and tender.
  2. Once the mung beans are cooked, stir in the coconut milk, sugar, vanilla extract, and salt. Mix well and let it simmer for an additional 10 minutes, allowing the flavors to meld together.
  3. Add the prepared glutinous rice balls and the sliced saba bananas to the pot. Cook for an additional 5 minutes, or until the rice balls are fully cooked and the bananas are tender.
  4. Serve hot in bowls, and enjoy the delightful combination of flavors and textures. This dish can be enjoyed on its own or paired with a scoop of ice cream for a delicious twist.

Tips

  • 💡 For an extra layer of flavor, try adding a pinch of cinnamon or a few pandan leaves while simmering the mung beans.
  • 💡 If you prefer a thicker consistency, reduce the amount of coconut milk slightly or let the mixture simmer longer.
