Homemade Ginger Ale

- 1/4 cup, peeled and chopped Fresh ginger
- 1/2 cup Granulated sugar
- 4 cups, divided Water
- 2 cups Club soda
- 1, juiced Lemon

Instructions
- In a medium saucepan, combine the chopped fresh ginger, granulated sugar, and 1 cup of the water. Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let it simmer for 5 minutes to extract the ginger flavor.
- Remove the saucepan from the heat and allow the mixture to steep for 20 minutes, letting the ginger infuse its spicy zing into the syrup.
- After steeping, strain the mixture through a fine-mesh sieve into a pitcher, discarding the ginger pieces.
- Add the remaining 3 cups of water, fresh lemon juice, and club soda to the pitcher. Stir well to combine all the ingredients.
- Serve the ginger ale over ice and garnish with lemon slices or fresh mint if desired.
