Ingredients

Fresh ginger
1/4 cup, peeled and chopped
Granulated sugar
1/2 cup
Water
4 cups, divided
Club soda
2 cups
Lemon
1, juiced
Ice
as needed for serving

Instructions

  1. In a medium saucepan, combine the chopped fresh ginger, granulated sugar, and 1 cup of the water. Bring the mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and let it simmer for 5 minutes to extract the ginger flavor.
  3. Remove the saucepan from the heat and allow the mixture to steep for 20 minutes, letting the ginger infuse its spicy zing into the syrup.
  4. After steeping, strain the mixture through a fine-mesh sieve into a pitcher, discarding the ginger pieces.
  5. Add the remaining 3 cups of water, fresh lemon juice, and club soda to the pitcher. Stir well to combine all the ingredients.
  6. Serve the ginger ale over ice and garnish with lemon slices or fresh mint if desired.
