
Gluten Free Asian Lettuce Wraps
These gluten-free Asian lettuce wraps are filled with flavorful ground chicken, vegetables, and a delicious sauce.
Ingredients
- Peanuts (2 tablespoons, chopped)
- Cilantro (2 tablespoons, chopped)
- Lime juice (1 tablespoon)
- Sriracha sauce (1 tablespoon)
- Lettuce leaves (8-10)
- Green onions (4, chopped)
- Carrot (1, grated)
- Red bell pepper (1, diced)
- Ginger (1 tablespoon, grated)
- Garlic (2 cloves, minced)
- Sesame oil (1 tablespoon)
- Gluten (free soy sauce - 2 tablespoons)
- Ground chicken (1 pound)
Instructions
- In a large skillet, heat the sesame oil over medium heat.
- Add the ground chicken and cook until browned, breaking it up with a spoon.
- Add the garlic, ginger, red bell pepper, carrot, and green onions. Cook for 5 minutes, until the vegetables are tender.
- In a small bowl, whisk together the gluten-free soy sauce, sriracha sauce, and lime juice.
- Pour the sauce over the chicken mixture in the skillet. Stir to combine and cook for an additional 2 minutes.
- Remove from heat and stir in the chopped cilantro.
- To serve, spoon the chicken mixture onto lettuce leaves and sprinkle with chopped peanuts.
- Roll up the lettuce leaves and enjoy!
