- 1/4 cup
- Gluten-free chicken broth
- 2 cups
- Dried thyme
- 1 teaspoon
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Frozen mixed vegetables
- 2 cups
- Cooked rice
- 3 cups
- Dairy-free cheese
- 1 cup, shredded
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic, cooking until the onion becomes translucent, about 3-4 minutes.
- Sprinkle the gluten-free all-purpose flour over the onion and garlic, stirring to coat evenly.
- Gradually pour in the gluten-free chicken broth, stirring constantly to prevent lumps from forming. Cook until the sauce thickens, about 3-5 minutes.
- Add the dried thyme, salt, and black pepper to the sauce, mixing well.
- In a large baking dish, combine the cooked rice, cooked chicken, frozen mixed vegetables, and the prepared sauce. Mix well to ensure everything is evenly coated.
- Sprinkle the dairy-free cheese evenly over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
