Chicken breasts

Gluten-free chicken broth

Dried thyme
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Frozen mixed vegetables
2 cups
Cooked rice
3 cups
Dairy-free cheese
1 cup, shredded

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion and minced garlic, cooking until the onion becomes translucent, about 3-4 minutes.
  4. Sprinkle the gluten-free all-purpose flour over the onion and garlic, stirring to coat evenly.
  5. Gradually pour in the gluten-free chicken broth, stirring constantly to prevent lumps from forming. Cook until the sauce thickens, about 3-5 minutes.
  6. Add the dried thyme, salt, and black pepper to the sauce, mixing well.
  7. In a large baking dish, combine the cooked rice, cooked chicken, frozen mixed vegetables, and the prepared sauce. Mix well to ensure everything is evenly coated.
  8. Sprinkle the dairy-free cheese evenly over the top of the casserole.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
