  2. Combine the gluten-free rolled oats, chopped almonds, dried cranberries, cinnamon, and salt in a large mixing bowl. Ensure that all ingredients are evenly distributed.
  3. In another bowl, whisk together the melted coconut oil, honey, and vanilla extract to form a sweet, luscious liquid.
  4. Pour this wet mixture over the dry ingredients and stir until every oat is coated and gleaming.
  5. Spread the granola mixture in a single, even layer on the prepared baking sheet. This will ensure uniform baking and golden crunchiness.
  6. Bake for 20-25 minutes, until the granola turns a beautiful golden brown. Remember to stir the mixture halfway through baking to ensure even browning.
