1/2 cup, cold and cubed
Eggs
3 large
Granulated sugar
1 cup
Lemon juice
1/2 cup, freshly squeezed
Lemon zest
from about 2 lemons
Baking powder
1/2 teaspoon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper, allowing some overhang for easy removal later.
  2. In a mixing bowl, combine the gluten-free all-purpose flour blend, 1 cup of powdered sugar, and salt. Whisk until well mixed.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Press the mixture evenly into the bottom of the prepared baking dish to form a crust.
