Ingredients

Quinoa
1 cup
Vegetable broth
2 cups
Olive oil
2 tablespoons
Garlic
2 cloves, minced
Lemon juice
3 tablespoons
Fresh herbs (such as parsley, basil, and dill)

Salt and pepper
to taste

Instructions

  1. Rinse the quinoa under cold water until the water runs clear to remove any bitterness.
  2. Bring the vegetable broth to a boil in a medium saucepan.
  3. Add the rinsed quinoa to the boiling broth, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the quinoa is tender and has absorbed all the liquid.
  4. While the quinoa is cooking, prepare the dressing. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, and season with salt and pepper to taste.
  5. Once the quinoa is done, fluff it gently with a fork to separate the grains and transfer it to a serving bowl.
