Zesty Lemon Herb Quinoa

- 2 cups Vegetable broth
- 2 tablespoons Olive oil
- 2 cloves, minced Garlic

Instructions
- Rinse the quinoa under cold water until the water runs clear to remove any bitterness.
- Bring the vegetable broth to a boil in a medium saucepan.
- Add the rinsed quinoa to the boiling broth, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the quinoa is tender and has absorbed all the liquid.
- While the quinoa is cooking, prepare the dressing. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, and season with salt and pepper to taste.
- Once the quinoa is done, fluff it gently with a fork to separate the grains and transfer it to a serving bowl.
- Pour the prepared lemon herb dressing over the warm quinoa, ensuring it's evenly distributed.
- Add the chopped fresh herbs to the quinoa and toss gently to mix them in. Adjust the seasoning if needed.
