Gnocchi Alla Sorrentina

Ingredients

  • Olive oil (2 tablespoons)
  • Black pepper (to taste)
  • Salt (to taste)
  • Parmesan cheese (1/4 cup, grated)
  • Fresh basil (1/4 cup, chopped)
  • Mozzarella cheese (8 ounces, shredded)
  • Tomato sauce (2 cups)
  • Gnocchi (1 pound)

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. Preheat the oven to 375°F.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the tomato sauce, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  5. Add the cooked gnocchi to the skillet and toss to coat in the sauce.
  6. Transfer the gnocchi and sauce to a baking dish.
  7. Sprinkle the shredded mozzarella cheese over the top.
  8. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and sprinkle with fresh basil and grated Parmesan cheese.
  10. Serve hot and enjoy!
