Instructions
- Heat the oil in a pan over medium heat. Once hot, add the chopped onions, garlic, ginger, green chilies, and curry leaves. Sauté until the onions turn golden brown, about 5-7 minutes.
- Add the chopped tomatoes to the pan and cook until they soften and break down, about 3-4 minutes.
- Stir in the turmeric powder, red chili powder, coriander powder, and salt. Mix well and let the spices cook for an additional 2-3 minutes to deepen the flavors.
- Carefully add the fish pieces to the pan and gently mix to coat them with the spice mixture. Cook for about 3-4 minutes, allowing the fish to become half cooked.
- Pour in the coconut milk and stir gently, ensuring the fish is submerged in the sauce. Cover the pan and let it simmer for approximately 10 minutes or until the fish is fully cooked and the flavors meld together.
- Serve the Goan fish curry hot, ideally paired with steamed rice or crusty bread to soak up the luscious sauce. Enjoy the rich taste of Goa!
Tips
- For an extra kick, add a few more green chilies or a dash of hot sauce.
- Feel free to use any firm white fish available to you, such as tilapia, cod, or halibut.
- For a vegetarian version, substitute fish with paneer or tofu.
