Ingredients

Original recipe serves 2

Eggs
4 large
Goat cheese
1/3 cup, crumbled
Fresh herbs
1/4 cup, chopped (such as parsley, chives, or dill)
Butter
1 tablespoon
Salt
1/4 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. In a medium bowl, whisk together the eggs, crumbled goat cheese, chopped fresh herbs, salt, and black pepper until well combined.
  2. Heat the butter in a non-stick skillet over medium heat until melted and bubbling.
  3. Pour the egg mixture into the skillet and cook for 2-3 minutes, or until the edges start to set.
  4. Using a spatula, gently lift the edges of the omelette, allowing the uncooked eggs to flow to the edges of the skillet.
  5. Continue cooking for another 2-3 minutes, or until the omelette is set but still slightly runny in the center.
  6. Fold the omelette in half and cook for an additional 1-2 minutes, or until the cheese is melted and the omelette reaches your desired doneness.
  7. Slide the omelette onto a plate and serve hot, garnished with additional herbs if desired.

Tips

  • 💡 For added flavor, consider mixing in vegetables such as spinach, sun-dried tomatoes, or bell peppers.
  • 💡 If you prefer a more robust taste, try adding a pinch of smoked paprika or a dash of hot sauce into the egg mixture.
  • 💡 Experiment with different types of cheese, like feta or cheddar, for a unique twist.
