Gorditas de Frijol y Queso

- 2 cups Masa harina

- 1 cup Salsa

Instructions
- In a large bowl, combine the masa harina and salt. Gradually add the water, mixing with your hands or a spatula until the dough is smooth and pliable.
- Divide the dough into 8 equal portions and roll each into a ball. Flatten each ball gently into a disc about 1/2 inch thick.
- Heat a large skillet or griddle over medium heat. Cook the gorditas for about 3 minutes on each side, until they are lightly browned and cooked through.
- Once cooked, let the gorditas cool slightly, then cut a slit in the side of each one to create a pocket for filling.
- Fill each gordita with refried beans, followed by the cheese, and drizzle with salsa.
- In the same skillet, heat enough vegetable oil over medium-high heat to cover the bottom. Fry the filled gorditas until golden and crispy, about 2 minutes per side.
- Remove from the skillet and place on paper towels to drain excess oil.
- Serve the gorditas hot with additional salsa on the side for dipping.
