Ingredients

Masa harina
2 cups
Salt
1/2 teaspoon
Water
1-1/4 cups (adjust as needed)
Vegetable oil
for frying
Refried beans
1 cup
Cheese (Queso Fresco or Cheddar)
1 cup, crumbled or shredded
Salsa
1 cup

Instructions

  1. In a large bowl, combine the masa harina and salt. Gradually add the water, mixing with your hands or a spatula until the dough is smooth and pliable.
  2. Divide the dough into 8 equal portions and roll each into a ball. Flatten each ball gently into a disc about 1/2 inch thick.
  3. Heat a large skillet or griddle over medium heat. Cook the gorditas for about 3 minutes on each side, until they are lightly browned and cooked through.
  4. Once cooked, let the gorditas cool slightly, then cut a slit in the side of each one to create a pocket for filling.
  5. Fill each gordita with refried beans, followed by the cheese, and drizzle with salsa.
  6. In the same skillet, heat enough vegetable oil over medium-high heat to cover the bottom. Fry the filled gorditas until golden and crispy, about 2 minutes per side.
  7. Remove from the skillet and place on paper towels to drain excess oil.
  8. Serve the gorditas hot with additional salsa on the side for dipping.
