Gotgamssam - Traditional Korean Lettuce Wraps

Ingredients
- 2 cups, cooked Rice
- 2 tablespoons Gochujang (Korean red pepper paste)
- 1 cup Kimchi
- 2, chopped Green onions
- 1 tablespoon Sesame seeds
- 1 tablespoon Sesame oil
- 2 tablespoons Soy sauce
- 2 cloves, minced Garlic
- 8 large leaves Lettuce leaves
- 1 pound, sliced Pork belly

Instructions
- Preheat a grill or grill pan over medium-high heat.
- In a bowl, combine the minced garlic, soy sauce, sesame oil, sesame seeds, and chopped green onions to create the marinade.
- Immerse the pork belly slices in the marinade, ensuring they are well coated. Let them soak in the flavors for at least 10 minutes.
- Place the marinated pork belly slices on the grill, cooking for 2-3 minutes on each side until they are thoroughly cooked and exhibit a slight char.
- Remove the pork belly from the grill and allow it to rest for a few minutes.
- Assemble the Gotgamssam by taking a lettuce leaf and placing a slice of grilled pork belly on top. Add a spoonful of kimchi and a small dollop of gochujang.
- Fold the lettuce leaf around the filling, creating a wrap.
- Serve the Gotgamssam immediately, with a side of cooked rice.
