Ingredients

Cheddar cheese
1 cup, grated
Flour or corn tortillas
4 large
Salt
to taste
Pepper
to taste
Chili powder
1 teaspoon
Cumin
1 teaspoon
Black beans
1 can (15 oz), drained and rinsed
Bell peppers
2, diced (any color)
Garlic
2 cloves, minced
Onion
1 medium, diced
Olive oil
2 tablespoons
Sour cream
for serving (optional)
Fresh cilantro
for garnish (optional)
Salsa
for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onions and minced garlic. Sauté until the onions are soft and translucent, about 5 minutes.
  3. Stir in the diced bell peppers, black beans, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes, or until the bell peppers are tender and the flavors meld together.
  4. Preheat the oven to 350°F (175°C).
  5. Spread a generous portion of the black bean and pepper filling among each tortilla, placing it in the center. Top with grated cheddar cheese.
  6. Carefully roll up each tortilla tightly, tucking in the sides as you go, and place them seam-side down on a baking sheet.
  7. Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly, and the tortillas are slightly golden.
  8. Remove from the oven and let cool slightly before serving.
  9. Serve warm, garnished with fresh cilantro, alongside sour cream and salsa for dipping.
