Ingredients
- Cheddar cheese
- 1 cup, grated
- Flour or corn tortillas
- 4 large

- Chili powder
- 1 teaspoon
- Cumin
- 1 teaspoon
- Black beans
- 1 can (15 oz), drained and rinsed
- Bell peppers
- 2, diced (any color)
- Garlic
- 2 cloves, minced
- Onion
- 1 medium, diced
- Olive oil
- 2 tablespoons
- Sour cream
- for serving (optional)
- Fresh cilantro
- for garnish (optional)
- Salsa
- for serving (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onions and minced garlic. Sauté until the onions are soft and translucent, about 5 minutes.
- Stir in the diced bell peppers, black beans, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes, or until the bell peppers are tender and the flavors meld together.
- Preheat the oven to 350°F (175°C).
- Spread a generous portion of the black bean and pepper filling among each tortilla, placing it in the center. Top with grated cheddar cheese.
- Carefully roll up each tortilla tightly, tucking in the sides as you go, and place them seam-side down on a baking sheet.
- Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly, and the tortillas are slightly golden.
- Remove from the oven and let cool slightly before serving.
- Serve warm, garnished with fresh cilantro, alongside sour cream and salsa for dipping.
