
Gourmet Grilled Cheese and Tomato Soup
This gourmet version of grilled cheese sandwich is paired with a rich and creamy tomato soup for the ultimate comfort food experience.
Ingredients
- Fresh basil (for garnish)
- Salt and pepper (to taste)
- Heavy cream (1/4 cup)
- Tomato soup (2 cups)
- Mayonnaise (2 tablespoons)
- Tomato (2 large, sliced)
- Gruyere cheese (4 slices)
- Cheddar cheese (4 slices)
- Butter (4 tablespoons)
- Bread (4 slices)
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread butter on one side of each bread slice.
- Place two slices of bread, buttered side down, on the skillet.
- Layer each slice with cheddar cheese, Gruyere cheese, and tomato slices.
- Spread mayonnaise on the remaining two slices of bread and place them on top of the tomato slices, mayo side facing up.
- Cook the sandwiches for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
- In a separate pot, heat the tomato soup over medium heat.
- Stir in the heavy cream and season with salt and pepper.
- Simmer for 5 minutes, stirring occasionally.
- Serve the grilled cheese sandwiches with a bowl of tomato soup.
- Garnish with fresh basil leaves.
