Homemade Artisan Ketchup

Ingredients
- 1 teaspoon or to taste Salt
- 1/2 teaspoon or to taste Black pepper
- 1/4 teaspoon Cayenne pepper
- 1/2 teaspoon Mustard powder
- 1/3 cup Brown sugar
- 1/2 cup Apple cider vinegar
- 2 lbs, ripe and roughly chopped Tomatoes
- 3 cloves, minced Garlic
- 1 large, finely chopped Onion
- 2 tablespoons Olive oil

Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the finely chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 5 minutes.
- Stir in the roughly chopped tomatoes, apple cider vinegar, brown sugar, mustard powder, cayenne pepper, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the mixture simmer. Cover the pot and allow it to cook for about 30 minutes, stirring occasionally.
- After 30 minutes, remove the pot from heat. Allow the mixture to cool for approximately 10 minutes.
- Transfer the cooled mixture to a blender. Blend until smooth.
- Pour the smooth ketchup into a clean jar or container. Store in the refrigerator.
Tips
- For a smoky flavor, consider adding a dash of smoked paprika.
- You can strain the ketchup after blending for a smoother consistency.
- The ketchup will thicken slightly once cooled.
