Cucumbers
4-5 medium, sliced
Garlic cloves
4, crushed
Bay leaves

Black peppercorns
1 teaspoon
Cumin seeds
1 teaspoon
Coriander seeds
1 teaspoon
Mustard seeds
1 teaspoon
Salt
2 tablespoons
Sugar
1 tablespoon
White vinegar
2 cups
Red pepper flakes
optional, to taste for heat

Instructions

  1. In a medium saucepan, combine the white vinegar, sugar, salt, mustard seeds, coriander seeds, cumin seeds, black peppercorns, bay leaves, and crushed garlic cloves.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally until the sugar and salt dissolve completely.
  3. Once boiling, add the sliced cucumbers to the saucepan and reduce the heat to low. Allow the cucumbers to simmer for 30 minutes, absorbing all the flavors.
  4. After 30 minutes, remove the saucepan from heat and let the pickles cool to room temperature.
  5. Once cooled, transfer the pickles and the liquid into an airtight container, ensuring the cucumbers are fully submerged in the brine.
  6. Refrigerate the pickles for at least 24 hours before serving to ensure they reach their full flavor potential.
