Ingredients

Original recipe serves 4

Whole grain buns
4
Olive oil
2 tablespoons
Black beans
1 can (15 oz), drained and rinsed
Carrot
1, grated
Garlic
2 cloves, minced
Red onion
1/2, finely chopped
Cilantro
1/4 cup, chopped
Breadcrumbs
1/2 cup
Egg
1
Cumin
1 teaspoon
Salt and pepper
to taste
Lettuce
as needed
Tomato
1, sliced
Avocado
1, sliced

Instructions

  1. In a large bowl, mash the black beans with a fork until mostly smooth.
  2. Add the grated carrot, minced garlic, chopped onion, chopped cilantro, breadcrumbs, egg, cumin, salt, and pepper to the bowl. Mix until all the ingredients are well combined.
  3. Using your hands, form the mixture into four evenly-sized patties.
  4. Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the patties to the skillet.
  5. Cook the patties for about 5-7 minutes on each side, or until they are browned and heated through.
  6. To serve, place each patty on a whole grain bun. Top with lettuce, tomato slices, and avocado slices.

Tips

  • 💡 For a vegan version, you can substitute the egg with a flax egg (1 tablespoon flaxseed meal + 2.5 tablespoons water).
  • 💡 Add a dollop of your favorite sauce for added flavor. A spicy mayo or a tangy yogurt sauce works well.
