Gourmet Veggie Burger

Ingredients
- 4 Whole grain buns
- 2 tablespoons Olive oil
- 1 can (15 oz), drained and rinsed Black beans
- 1, grated Carrot
- 2 cloves, minced Garlic
- 1/2, finely chopped Red onion
- 1/4 cup, chopped Cilantro
- 1/2 cup Breadcrumbs
- 1 Egg
- 1 teaspoon Cumin
- To taste Salt and pepper
- As needed Lettuce
- 1, sliced Tomato
- 1, sliced Avocado

Instructions
- In a large bowl, mash the black beans with a fork until mostly smooth.
- Add the grated carrot, minced garlic, chopped onion, chopped cilantro, breadcrumbs, egg, cumin, salt, and pepper to the bowl. Mix until all the ingredients are well combined.
- Using your hands, form the mixture into four evenly-sized patties.
- Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the patties to the skillet.
- Cook the patties for about 5-7 minutes on each side, or until they are browned and heated through.
- To serve, place each patty on a whole grain bun. Top with lettuce, tomato slices, and avocado slices.
Tips
- For a vegan version, you can substitute the egg with a flax egg (1 tablespoon flaxseed meal + 2.5 tablespoons water).
- Add a dollop of your favorite sauce for added flavor. A spicy mayo or a tangy yogurt sauce works well.
