Ingredients
- Plain flour
- 3 cups
- Salt
- 1 teaspoon
- Warm water
- 1 cup
- Olive oil
- 2 tablespoons
- Butter
- 2 tablespoons, melted
- Onion
- 1 medium, finely chopped
- Garlic
- 2 cloves, minced
- Fresh spinach
- 4 cups, chopped
- Feta cheese
- 1 cup, crumbled
- Black pepper

Instructions
- In a large bowl, combine the plain flour and salt. Gradually add the warm water and olive oil, mixing with a wooden spoon until a soft dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Cover the dough with a damp cloth or plastic wrap and let it rest for 30 minutes to an hour; this helps to relax the gluten.
- While the dough is resting, heat a pan over medium heat. Add a splash of olive oil, then sauté the finely chopped onion and minced garlic until translucent and fragrant, about 3-4 minutes.
- Add the chopped spinach to the pan and cook until wilted, approximately 2-3 minutes. Remove from heat and stir in the crumbled feta cheese. Season with black pepper to taste.
- After the dough has rested, divide it into 4 equal pieces. On a floured surface, roll out each piece into a thin circle, about 10 inches in diameter.
- Spread a generous amount of the spinach and feta mixture onto one half of each circle, leaving a small border around the edge. Fold the other half of the dough over the filling and press the edges firmly to seal, making sure there are no gaps.
- Preheat a griddle or large frying pan over medium heat. Brush each gozleme with melted butter on both sides.
- Cook the gozleme on the griddle for 2-3 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to avoid burning.
- Remove from heat, cut into slices, and serve warm, optionally with a side of yogurt and lemon wedges for added flavor.
