Ingredients

Water
2 cups
Granulated sugar
1 cup
Fresh lemons
4, juiced (about 1 cup of lemon juice)
Lemon zest
1 tablespoon (optional, for extra flavor)

Instructions

  1. In a saucepan, combine the sugar and water. Bring to a gentle boil over medium heat, stirring continuously until the sugar has completely dissolved.
  2. Remove the saucepan from heat and allow the mixture to cool for about 15 minutes.
  3. Once cooled, stir in the freshly squeezed lemon juice and lemon zest (if using) until well combined.
  4. Pour the mixture into a shallow dish or a flat pan, ensuring it's spread evenly.
  5. Place the dish in the freezer and freeze for 30 minutes.
  6. After 30 minutes, use a fork to scrape the ice crystals that have formed on the top layer, breaking up the ice.
  7. Return the dish to the freezer and repeat the scraping process every 30 minutes for the next 3 hours, until the granita is fluffy and fully frozen.
  8. Once ready to serve, fluff the granita one final time with a fork. Let it sit at room temperature for about 5 minutes before serving to soften slightly.
